Very moist chocolate cake

Tomorrow’s the big day, so today I’m making a cake. I thought I’d share this family recipe.

Very Moist Chocolate Cake

From Grandma Kilkenny

Mix 2 cups sugar and 2 cups flour in a large bowl. Bring 1 cup water and 1 stick butter and 4 tablespoons cocoa to a fast boil, then pour over flour and sugar mixture.

Then add: 2 eggs, 1/2 cup buttermilk, 1 teaspoon soda, 1 teaspoon vanilla. Mix.

Bake 20 to 25 minutes at 400 degrees.

Frosting: in the same pan bring 1 stick butter and 4 tablespoons cocoa and 4 tablespoons milk to a boil. Remove from heat and add 1 teaspoon vanilla. Add powdered sugar to make frosting.

I’ll warn you – this cake has a habit of falling for no reason whatsoever. It’s still good, though, even if it ends up flat, so I take my chances. :)

This is very similar to my mom’s Cookie Sheet Cake– made in a sheet pan, (1″ sides) more the look of a brownie. My daughter-in-law’s absolute favorite. I think making it in a cookie sheet pan eliminates the ‘falling’ problem. It is very moist, yummy cake.
