Dinner, Saturday, April 24th

Here’s the plan:

Pear and Gorgonzola salad like this recipe. Risotto like this one. (I didn’t care for the tomatoes in the earlier recipe.) Grilled rosemary pork tenderloin. The key is to NOT overcook the pork.

That should do it. It’s saddened my family but I’ve been cutting out the bread we almost always had at dinner. The risotto should be starch enough. I must admit it’s much better for our waistlines to be limiting such things.

I had a brief idea of tiramisu for dessert, but caught myself. That waistline thing again. If you can spare the extra calories, go for it. KP had a wonderful recipe blogged, but darn it, BrookfieldNOW is such a mess I can’t find it. :(

Here’s the report folks. It was as good as it sounded. Of course, I made some modifications…

First, let me say if you’ve never tried making risotto before, consider that second recipe. I’ve never in my life made risotto where I walked away from it, but I did tonight, and darn it was good. I did two things different: 1) I left the mushrooms in large slices because someone around here is mushroom challenged and likes to pick them out, and 2) I didn’t use the pecorino romano. It is, without doubt, one of my favorite cheeses ever, but I was using a strong gorgonzola in the salad and didn’t want it to compete.

Next, my tenderloin was very small for just three people, so I cooked it for a lot less time. I drizzled olive oil and honey on top before laying down the rosemary. Oh, it was so good.

Finally, the salad was a hit. I had never done the peppered pecans (I’d sugared them before, but the pepper was a new flavor) and they were a great addition. Also, I added the cheese to the salad, not the dressing. Lots of cheese. Cheese is good.

    Yum! The salad sounds great especially with the rest of the menu. Does your family know how fortunate they are that you have such wonderful culinary skills?

    I was on the run yesterday so stopped at Outpost to grab a salad. I got a spinach salad with red onions, pine nuts, walnuts and dried cranberries. The dressing was a maple vinaigrette and it was fabulous! Now I’m going to have to try to find a recipe for it or recreate it. It’s hard to get something out of your thoughts when cooking/baking is a fun thing to do!

    Dressings are a wonderful addition to a salad. I had a curry coconut over shrimp and avocado in Antigua and would love to recreate it. All of the recipes I find are for green curry, which I hadn’t considered, but will try in an attempt to find that flavor again. It was amazing.

    As for the tiramisu recipe, true, I only told Cindy about it; I hadn’t posted it yet.

    Since Brookfieldnow changed its server last year, many of my photos on older posts disappeared. (The process of posting pictures is more laborious too–too many steps for each photo. Some day, I need to figure out how to get back into the posts to restore the pics.) At least on Brookfield7, the pics will stay. :)
