If it’s green, eat it.

That seems to be the mantra from all the food blogs I have on my feed reader. I’ve seen mint everything in the last couple of days. (I’m not a big mint food fan, though I love it in teas and lotions.) I’ve seen more green icing than is probably legal. I’ve seen mint mousse.

How in the heck do these food bloggers eat all this stuff and still fit into the average American doorway? I don’t get it. There is a growing obsession with food. There’s a growing obsession with health. I’m missing the overlap, because those two fixations are mutually exclusive on this body.

So, no sweets around here tomorrow. I feel certain St. Patrick won’t mind.

What I am working on is finding a recipe close to the tortilla soup from Haute Taco. (Man, if you guys are reading and want to share, I’m your girl! I’ve been a little obsessed with the idea since writing an earlier comment.) I’ve found a couple of things I think come close, so I’ll let you know.

Tomorrow – the big day – is probably Irish chicken stew just to be different. I may celebrate with a Sprecher’s Abbey Triple. After that I’ll be so mellow I won’t even mind doing the dishes.

St. Pat’s Dinner for us will be leftover grilled chicken breasts from last night cut up and tossed with sweet baby peas, red onion and Ditalini pasta in an olive oil/balsamic vinegar dressing, salt/pepper to taste and freshly grated Parmesan cheese. Add some nice bread and it’s good to go!

I think I have a tortilla soup recipe so will look it up. I haven’t had the one at Haute Taco so don’t know if it’s similar.

This is the one I’ve made. The family likes it with corn bread on the side :)

That one’s on my list. I’m also looking at this because I want some cumin. Cumin is definitely a flavor in the Haute Taco version. No to the tomato paste, though, it’s more of a broth.

And I’m hoping to score some fresh queso blanco…

The economy being bad, people being out of work, et. al., they focus (intentionally or not) on food. That’s just a fact of life.

Murf’s is going to be serving burgers on green buns. Yummy.

Ok, just in case anyone is keeping track, I got one of those “don’t cook dinner for me” phone calls about 3pm. So…tortilla soup is postponed until Thursday.

  7. Pat says:

Hey, that recipe sounds really good…I’m getting hungry. Save the soup for Saturday when it’s cold out and snowing!

I may or may not have 2 sisters who are waitresses at Haute Taco and are good friends with the cooks.
