Cranberry bread

Only four more recipes to type! I ran across this one I’d made just last week and thought you needed it. This loaf is a wonderful hostess gift. It’s breakfast the next morning. I wrap it in plastic wrap and tie it with a ribbon.

Cranberry bread

12 oz. cranberries
1 cup chopped pecans

Stir together, then make a well:

2 cups flour
1 cup sugar
1 3/4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon soda

Pour mixture of:

1 well-beaten egg
3/4 cup orange juice
2 tablespoons oil

into center well of flour mixture.

Mix to moisten.

Add berries and nuts.

Line bread pan with parchment. Bake 70 minutes at 350 degrees.

The orange and cranberry combination is yummy. If you don’t have parchment, use wax paper, but also grease it.

Also, I usually use frozen cranberries since I keep a bag around.
