Here’s the final menu for Friday’s film shoot catering project:

I have never in my life picked up 16 bell peppers in one grocery store trip. Right now I’m ignoring the fact I will soon be dicing 16 bell peppers.
Two things I did to save time: I called in my deli order already this morning, and I delegated the cookies and brownies to a lovely young baker who recently graduated from East.
Today I’ll make the two bean salads, the lemon bars, the gazpacho, the dipping oil, and the hummus. They actually are better after sitting in the fridge for a bit. Tomorrow is everything else except the wrap sandwiches, which I’ll make on Friday. I’ll also pick up some sliced fresh Italian bread then, too.
Wish me luck. I am really going to need it.
